Bran Flake Muffins

Recipe Ingredients:

1/5 cups SR Flour
1/25 cups Bran Flakes with Sultanas (got them for $2 a box at Coles)
3/4 cup brown sugar
1 tsp mixed spice or cinnamon
1 green apple chopped finely
3/4 cup milk
1/2 tsp lemon juice
75g melted butter or 75ml  of oil
2 large eggs, lightly beaten
1/2 cup bran flakes and sultanas for topping

Lemon Icing: icing mixture & lemon juice can be dolloped on top.

Method: mix wet and dry mix together, spoon into a muffin pan and cook for approx 18-20 mins at 160 degrees fan forced of 180 degrees conventional oven.

Top with a dollop of lemon icing....
