Easy Caramel Popcorn


Ingredients

  • 2 tablespoons vegetable oil - or olive
  • 1/2 cup popping corn

  • 1/4 cup honey
  • 1/4 cup golden syrup
  • 1 cup caster sugar
  • 100g butter, chopped


Method

  1. Grease two 5cm-deep, 21cm x 30cm (base) baking pans. Line base and sides with baking paper, allowing 2cm overhang at long ends.
  2. Heat oil in a large saucepan over medium heat. Add 2 corn kernels. Oil is hot enough when corn turns slowly in a circle. Add remaining corn. Cover with a tight-fitting lid. Shake saucepan gently when corn starts popping. Remove from heat when corn stops popping. Transfer to a bowl. Discard unpopped corn.
  3. Place honey, golden syrup, sugar and butter in a saucepan over low heat. Cook, stirring, for 6 to 7 minutes or until sugar has dissolved. Bring to the boil. Boil, without stirring, for 5 to 6 minutes or until light golden. Working quickly, pour mixture over popcorn. Stir to combine. Spoon into prepared pans. Set aside to cool completely. Break into pieces.

Raspberry Coconut Dream Slice


Makes 20 small 45g pieces

Ingredients
2 cups plain flour
1 cup sugar
125g melted butter
3 eggs
1 teaspoon vanilla essence
3/4 cup raspberry jam
2 cups dessicated coconut

Method
Preheat oven to 180C. 
Process flour, 1/2 cup sugar and butter to resemble breadcrumbs. Add 1 egg and vanilla. Process to form a dough.

Press dough into base of a greased/prepared pan. Bake for 15 to 20 minutes, or until light golden. Spread jam over warm base.

Whisk remaining eggs and remaining 1/2 cup sugar together. Stir in coconut. Spread over jam. Bake for 25 minutes, or until golden. Cool completely in pan. Cut into pieces. Serve. Can be frozen.

Chocolate Caramel Slice - YUM YUM!

Base
112g (1/2 cup, firmly packed) brown sugar
56g (2/3 cup) desiccated coconut
100g (2/3 cup) self-raising flour
85g butter, melted

Preheat oven to 180 degrees Celsius (160 degrees Celsius fan-forced).

Grease a 20cm square cake pan and line the base and sides of the pan with baking paper.

Stir brown sugar, coconut, and flour together in a large bowl until well combined. Add butter and mix until well combined. Firmly press mixture into prepared pan using the back of a spoon.

Bake for 10-12 minutes or until lightly browned and slightly risen.

Caramel Filling
30g butter
40ml (2 tablespoons) golden syrup
395g (1 can) sweetened condensed milk

Place butter and golden syrup in a medium, heavy-based saucepan over medium heat, stirring occasionally. When butter has melted, add condensed milk. Stir constantly over medium heat for about 9-12 minutes, until caramel thickens.
 
Allow slice to cool to room temperature.

Topping
150g milk or dark chocolate, melted (we use Cadbury Dairy Milk chocolate- in different flavours for variety)

Melt the chocolate in a small saucepan over very low heat, stirring frequently. Alternatively, melt the chocolate in a double boiler or in a microwave-safe bowl in the microwave. Spread melted chocolate over caramel.

Refrigerate slice until chocolate is just set, about 20-30 minutes. Remove slice from pan and cut into pieces. We use a hot, dry knife to cut the slice (fill a tall glass with hot water, dip knife in water for a few seconds, and wipe dry with a clean tea towel).

Store slice in an airtight container in the refrigerator.

New Hobby: Cake Decorating - Fruit Cake First!

Edmonds Christmas Cake

500g currants

500g raisins
2 cups sultanas
2 cups chopped dates
150g pkt crystalised ginger
160g mixed peel
150g glace cherries
2 tbs organge rind - grated
1/2 cup dark rum
1/2 cup oj
1/4 tsp almond essence
1/2 teaspoon vanilla ess
2 tsp grated lemon rind
1 cup blanched almonds
2.5 cups plain flour
1/2 tsp edmonds baking soda
1 tsp cinnamon
1 tsp mixed spice
250g butter
1.5 cups brown sugar
2tbs treacle
5 eggs

Put all fruit in a saucepan. Add orange rind and OJ. Cover. Bring to boil, reduce heat and cook gently for 15 mins to pluymp fruit. Remove from heat. Stir then set aside overnight. Stir essences, lemon rind and almonst in saucepan. Sift flour, soda and spices into a bowl. Cream butter, sugar and treacle until light and fluffy. Add eggs one at a time, beating well after each addition,. Fold in sifted ingredients alternately with fruit mix. Spoon mixture into greased and lined 25cm round cake tin. Bake at 150"c for 4 hours or until an inserted skewer comes out clean when tested. Leave in tin until cold. Wrap in foil. Store in a cool place.

Pikelets

Ingredients

  • 1 cup (150g) self-raising flour
  • 1 tbs caster sugar
  • 3/4 cup (185ml) milk
  • 1 egg
  • Melted butter, to brush, plus extra knobs to serve

Method

  1. Sift flour and sugar together into a bowl with a pinch of salt.
  2. Whisk milk and egg together, then add to dry ingredients, whisking until smooth.
  3. Heat a non-stick frypan over medium heat and brush with a little melted butter. Drop level tablespoonfuls of the mixture into the pan and cook for half a minute or until bubbles appear on the surface.
  4. Turn over and cook other side for 1 minute until golden.
  5. Allow to cool and serve with butter.

Delicious Hot Cross Buns

Easter isn't complete without eating warm hot cross buns straight from the oven. So, for holiday fun, follow our recipe to bake your own batch.

Makes 12


Ingredients
1 tbs dried yeast
1 tsp caster sugar
185ml (3/4 cup) warm milk
125ml (1/2 cup) cold milk
50g butter, melted
1 egg, lightly whisked
525g (3 1/2 cups) plain flour
200g mixed dried fruit
70g (1/3 cup) caster sugar
2 tsp mixed spice
A pinch of salt
75g (1/2 cup) plain flour
160ml (2/3 cup) water
2 tbs caster sugar

Method


Make the dough: Whisk yeast, sugar and the 3/4 cup of warm milk in a jug. Set aside for 10 minutes or until frothy. Whisk in the 1/2 cup of cold milk, butter and egg. Combine flour, dried fruit, sugar, mixed spice and salt in a bowl. Make a well in the centre. Add the yeast mixture. Use a wooden spoon to stir until combined then use your hands to bring the dough together in the bowl. Turn onto a lightly floured surface and knead for 10-15 minutes or until smooth and elastic. Place in a greased bowl. Cover with plastic wrap. Set aside to prove for 1 1/2 hours or until doubled in size.



Shape the buns: Punch down the centre of the dough with your fist. Knead on a lightly floured surface for 2 minutes. Shape into 12 even portions. Brush a 16 x 26cm (base measurement) slab pan with melted butter to grease. Place portions side by side in the prepared pan. Cover with a clean tea towel. Set aside in a warm, draught-free place to prove for 30 minutes or until doubled in size.



Bake and decorate: Preheat oven to 200°C. Combine flour and water to make a paste. Place in a sealable plastic bag. Cut 1 corner from the bag to make a 2mm hole. Pipe crosses onto the buns. Bake for 10 minutes. Reduce oven temperature to 160°C. Bake for 20 minutes or until golden and cooked through. Meanwhile, sugar and water in a saucepan over low heat until the sugar dissolves. Simmer until the glaze thickens. Transfer buns to a wire rack. Brush tops with glaze. Set aside to cool slightly.

Lemon Passionfruit Slice

INGREDIENTS


1 cup self-raising flour

1 cup desiccated coconut

½ cup caster sugar

125g butter, melted

395g can sweetened condensed milk

Juice 2 lemons

Pulp 2 passionfruit



METHOD

1.Preheat oven to moderate, 180°C. Lightly grease a 20 x 30cm slice pan. Line base and sides with baking paper.

2.In a large bowl, combine flour, coconut and sugar. Add butter, stirring until combined.

3.Press mixture firmly into prepared pan. Bake for 12-15 minutes, until golden. Cool slightly.

4.Meanwhile, in a medium bowl, combine condensed milk, juice and passionfruit. Pour over base and bake for a further 10-12 minutes, until set.

5.Cool in pan then chill until required. Serve cut into squares. Store, chilled, in an airtight container.

Yummy Vanilla Cupcakes


Makes 12


Ingredients

2 cups self-raising flour, sifted

3/4 cup caster sugar

3/4 cup milk

125g butter, melted, cooled

2 x 59g eggs, beaten

1 teaspoon Queen Natural Vanilla Essence

Sprinkles and lollies, to decorate

Icing

1 1/2 cups pure icing sugar

Pink food colouring, optional

1 to 1 1/2 tablespoons water



Method

Preheat oven to 200°C. Grease a 12 x 1/3-cup capacity muffin pan. Alternatively, line holes with paper cases. Combine flour and caster sugar in a bowl. Make a well in the centre.

Add milk, butter, eggs and vanilla to flour mixture. Using a large metal spoon, stir gently to combine.

Spoon mixture into prepared muffin pan. Bake for 12 to 15 minutes, or until a skewer inserted into the centre comes out clean. Stand in pan for 5 minutes before transferring to a wire rack to cool.

Make icing: Sift icing sugar into a bowl. Add food colouring and water. Stir until smooth and well combined. Spoon icing over cupcakes. Decorate with sprinkles and lollies.

Sticky Date Cake with Caramel Sauce

Ingredients (serves 8)
250g pitted dates, chopped
1 teaspoon bicarbonate of soda
1 1/2 cups boiling water
125g butter, softened
3/4 cup brown sugar
1 teaspoon vanilla extract
2 eggs, at room temperature
2 cups self-raising flour, sifted

Caramel sauce
1 cup brown sugar
300ml thickened cream
1/2 teaspoon vanilla extract
60g butter, chopped

Method
Preheat oven to 180°C. Grease a 7cm deep, 22cm (base) cake pan and line base with baking paper.
Place dates and bicarbonate of soda in a heatproof bowl. Pour over boiling water. Allow to stand, uncovered, for 20 minutes or until dates are tender.
Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, stir in date mixture and flour. Mix until well combined.
Spoon mixture into cake pan. Bake for 40 to 45 minutes or until a skewer inserted into the centre comes out clean. Stand for 10 minutes before turning onto a wire rack.

Make caramel sauce: Combine sugar, cream, vanilla and butter in a saucepan over medium heat. Cook, stirring, for 3 minutes or until boiling. Reduce heat to low. Simmer for 2 minutes. Pour warm sauce over warm cake. Cut into wedges. Serve.

Raspberry & Bluberry Custard Slice

Base
200g butter, softened
1/2 cup caster sugar
11/2 cups plain flour, sifted
1/2 cup desiccated coconut

Berry topping
1 cup Creative Gourmet frozen Raspberries
1 cup Creative Gourmet frozen Blueberries
2 eggs
2 egg yolks
1/3 cup caster sugar
600ml carton thickened cream
1 tablespoons custard powder
1 teaspoon ground nutmeg
1. Preheat oven to 180°C. Grease and line a 3cm-deep 24cm x 29.5cm (base) rectangle baking pan.

2. To make the pastry base, beat butter and sugar until well combined. Stir in plain flour and coconut. Mix well. Press the mixture evenly over the base of pan using your fingertips. Bake for 12-15 minutes or until light golden. Set aside to cool for 10 minutes.

3. Spread the frozen berries over the pastry base. Whisk the eggs, egg yolks, 1/4 cup sugar, cream and custard powder until well combined. Pour over the berries. Bake for 30 minutes or until the centre is set. Allow to cool completely in the pan. Combine remaining 1 tbs sugar and nutmeg, sprinkle over slice. Cut slice into pieces and serve.

2tbs butter melted
1 egg beaten
2 cups SR Flour
2tbs milk - I put three

Whack them in patty holders and cook until light and soft and yummy!

CHOCOLATE MUD CAKE IN A MUG?

5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.


EAT! (this can serve 2 if you want to feel slightly more virtuous). And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Bran Flake Muffins


Recipe Ingredients:

1/5 cups SR Flour
1/25 cups Bran Flakes with Sultanas (got them for $2 a box at Coles)
3/4 cup brown sugar
1 tsp mixed spice or cinnamon
1 green apple chopped finely
3/4 cup milk
1/2 tsp lemon juice
75g melted butter or 75ml  of oil
2 large eggs, lightly beaten
1/2 cup bran flakes and sultanas for topping

Lemon Icing: icing mixture & lemon juice can be dolloped on top.

Method: mix wet and dry mix together, spoon into a muffin pan and cook for approx 18-20 mins at 160 degrees fan forced of 180 degrees conventional oven.


Top with a dollop of lemon icing....

BEST Choc Chip Cookie Recipe - even the dough is YUM!




This is one of those biscuits that you can easily adapt to your tastes; if you prefer less chocolate or less coffee, that’s fine.

The quantities in this will allow you to cook a batch and freeze another two, depending on how many biscuits you like in a batch.

INGREDIENTS

•500g dark chocolate, chopped (when chopping, put choc block on chopping board and use a big knife to chop each row in half, then break up. Also I use 1 X 250 block milk chocolate, and 250 gms of white choc bits. I have also made with 2 X 250 milk choc blocks and no white – also yum.)... See More

•250g plain flour

•1/2 cup cocoa powder

•2 1/4 tsp baking powder

•1 tsp salt (½ tsp if using normal salted butter)

•150g unsalted butter (I use salted butter and just add ½ tsp of salt not 1 tsp – see above)

•1 1/2 cups squashed-down brown sugar

•1/2 cup white caster sugar (normal works fine too tho)

•4 eggs

•4 tsp instant coffee, dissolved in a little boiling water (optional – 1 use 2 tsp decafe)

•4 tsp good quality vanilla essence



DIRECTIONS:
1. Sift and mix flour, cocoa, additional baking powder, and salt. Add the chopped chocolate. Put aside.
2. Cream butter with white and brown sugar. Beat in eggs one at a time. Mix in dissolved coffee and vanilla essence.
3. Combine butter mixture with dry ingredients. Don’t over-stir.
4. Stick dough in freezer for half an hour or so.
5. Preheat oven to about 180 degrees.
6. Remove dough from freezer and divide into 3 batch-size sections. Wrap 2 sections in glad wrap, or little zip lock bag, seal, and pop back in the freezer for another day.
7. Cover biscuit trays with baking paper, roll remaining dough into approximately fifty cent size balls while it is still cold, squash slightly with fork, and distribute over trays, leaving plenty of room for biscuits to spread.
8. Cook for 5-15 minutes, depending on how soft or crisp you like your biscuits. In my fanforced oven at about 180 degrees, I usually cook for 12 minutes. Biscuits will have risen a little and be covered in little air holes when cooked. They’ll still be soft until they cool, so don’t over cook! If you want them a little chew then only cook for about 8 mins, really crispy cook for about 14 mins. Just make sure you keep an eye on them :o)

Go forth and fill the world with your chocolatey creations!

PS: when using the frozen batches, don’t bother about defrosting; use the dough straight from the freezer, and quickly – it warms up within minutes and will be a nightmare to remove from the gladwrap if you let it sit.

DELICIOUS! We got about 5 batches from this!

Carrot Cake Recipe

I halved this recipe and it gave me an average sized cake...

DRY MIX
350g sr fl
1sp 1/2 bpowder
1tsp ground cinn
1/2 tsp ground ginger and cloves

WET MIX
375g brown sugar
275 ml oil
200g greek yoghurt or any yoghurt
4 eggs

Whisk wet and dry mixed til smooth

Add 400g peeled / grate carrots... stir carrot into flour mix/toss and combine

Pour into cake tin (lined), 170 degrees 45-5 mins to cook depending on moisture in carrots

FROSTING:
250g cream cheese
80g icing
100g melted white choc
tsp vanilla

ice and then put walnuts around edge outer... YUM! (I didn't have any walnuts)

Recipe: Choc Brownies (without chocolate)


Here is a very tasy recipe I found for choc brownies. It won't last long in the fridge, especially if you live with "fridge gazers".

For many of us, chocolate does not last long enough in the cupboard for it to be ready for recipes, so I have found a great recipe which relies on the chocolatey taste of cocoa.. Just as delicious!

¾ cup butter (170 g) melted
1+½ cup sugar (330 g)
2 teaspoon vanilla
3 eggs
¾ cup all-purpose flour (85 g)
½ cup cocoa powder (50 g)
1 teaspoon baking powder
a pinch of salt (optional)
3 oz (100 g) chopped pecans or walnuts (optional)

Throw it all in a bowl. Mix well. Then put into oven for appox 20mins or until bounces back..

It's also nice with choc/cocoa icing!
Provides approx 12 servings...
